Christmas is already looking around the corner and even I am not that much a Christmas person, I absolutely love all the spices and treats around the holidays. Including gingerbread! For a LONG time I hated the taste of gingerbread – now I am actually about to become a fan of it. And I am sure these gingerbread baked oats with a jam filling, will make you become a fan of the gingerbread spice as well!
This recipe is easy to follow and quick to make (of course not as quick as stove top porridge, but good things take time. I recommend blending your oats to fine oats flour before adding all the other ingredients, as this will make your oats extra soft and fluffy.
Personally, I am baking my oats in an air fryer, as it is more energy sufficient. But you can bake them in an oven as well, but it might need a few minutes longer.

This recipe gives two portions gingerbread baked oats, however you can also divide it in half. I usually make two portions and share it with my mom or keep it in an airtight container and have it the next day (I can recommend this one the next day with some vanilla sauce! gingerbread baked oats

minutesIn case you are going to bake them in the oven, preheat it to 180 degrees upper and lower heat, in case you´re going to bake them in an air fryer, you can just place the ready-to-bake-oats in the air fryer and turn in on then.
Ingredients
1 cup oats
1 tsp ground flax-seeds
2 eggs
1 banana
1 tbsp tahin
1-2 tsp honey
a dash of milk
opt. 1 tbsp curd/skyr – it makes it less dry, in my opinion
1 tsp gingerbread spice
1 tsp cinnamon
1 heaped tsp baking powder
pinch of salt
- filling
2 tsp jam – I used homemade plum jam
- topping
chocolate sprinkles or cocoa nibs
Directions
- Grind the oats to oats-flour with a food processor, mash up the banana and add all the ingredients listed under “oats”, mix well!
- grease and flour two baking dishes and fill both with 3/4th of the mixture
- place in each oats mixture 1 tsp jam in the middle and cover it with the rest of the mixture. Sprinkle the chocolate sprinkles on top
- bake them for 15 minutes at 180 degrees (it takes 15 minutes in an air fryer, it might need 2-5 minutes longer in an oven)
