Perfect combination: blueberries with lemon. There is no better way to start the day than with blueberry lemon pancakes. The pancakes are vegan and really easy to make. I use protein powder for this, you can read about why here. If you don’t have that much time in the morning, you can also pre-bake the pancakes and simply bake them again in the toaster the next few days.
blueberry lemon pancakes

Ingredients
dry ingredients
1/2 cup (50g) (spelt)flour
1/8 cup protein powder (I used lemon)
1/2 tsp baking powder
1 tbsp sugar
a pinch of salt
liquid ingredients
1/2 cup milk (whole fat)
1 tsp apple cider vinegar or lemon juice
1/2 tsp vanilla extract
optional
a handful blueberries
Directions
combine all the dry ingredients with a whisk
add the liquid ingredients and give it a quick and short stir, just so that there are no "lumps" left
Heat up a pan (if the pan isn´t well coated I recommend you add a bit of oil or butter to bake the pancakes, otherwise they´ll stick to the pan), now you can bake the pancakes (2tbsp dough should be approximately one pancake) on medium heat. If you want the blueberries in the dough - slightly push them in the raw dough in the pan and then let them bake.
